fix: explicitly pick billingCustomer fields for workflow serialization (#97)

The full middleware context object passed as billingCustomer contained
non-serializable properties (Drizzle project result, TanStack internals)
that caused a DataCloneError in Miniflare's workflow binding during
Docker self-hosting.
